500 gms boiled and diced colocassia (arbi)
4 chopped ladies finger (bhindi)
1/4 cup chopped onions
1 ginger (adrak)
12 garlic (lehsun) cloves
2 chopped tomatoes
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
2 tsp mustard seeds ( rai / sarson)
2 tbsp mustard (rai / sarson) oil
salt to taste
- Heat 1 tbsp oil in a pan and add the arbi and ladies finger and saute for 3-4 minutes, or till they turn golden brown in colour. Keep aside.
- Combine the mustard seeds and garlic and blend in a mixer into a fine paste. Keep aside.
- Heat the mustard oil in a pan and add the onions and ginger and saute for 3 minutes.
- Add tomatoes, ground paste, chilli powder and haldi powder, mix well and saute for 5 minutes.
- Serve hot.
