Cranberry Chicken Pulao

Cranberry Chicken pulao is filled with flavours and incorporates the nutritious benefits of cranberries, adding a healthy twist to your meal.

The pulao tastes best when accompanied by mirchi salan or raita and is an ideal meal for dinner gatherings.

Ingredients for Cranberry Chicken Pulao

  • P Mark Kachi Ghani Mustard oil: 2 tbsp

  • Cranberries: ½ cup + 2 tbsp for garnish

  • Chicken Leg: 500 grams (boneless)

  • Basmati Rice: 2 cups (washed, soaked for 20 minutes and drained)

  • Cloves: 3-4

  • Black Peppercorns: 6-7

  • Cinnamon Stick: 2 inch (broken)

  • Fried Onions: 1¼ cups

  • Ginger garlic chilli paste - 1½ tbsp

  • Turmeric Powder: ¼ tbsp

  • Red Chilli Powder: 1½ tbsp

  • Cumin Powder: ½ tsp

  • Coriander Powder: 1 tsp

  • Fresh Coriander: 2 tbsp (chopped)

  • Fresh Mint Leaves: 8-10

  • Fresh tomato puree: 1 cup

  • Meat Masala: 1½ tsp

  • Salt: According to taste

Method for Cranberry Chicken Pulao

  1. Heat mustard oil in a non-stick wide pan. Add cloves, black peppercorns, and cinnamon sticks and sauté till fragrant.

  2. Add 1 cup fried onions and ½ cup US Cranberries and sauté on medium heat for 1-2 minutes.

  3. Add ginger garlic chilli paste, mix, and cook for a minute. Add chicken and sauté for 2-3 minutes.

  4. Add turmeric powder, red chilli powder, cumin powder, coriander powder and 1 tablespoon coriander leaves. Add some fresh Dhania leaves.

  5. Add salt, mix, cover, and cook for 1-2 minutes.

  6. Add fresh tomato puree, mix and cook for 1 minute.

  7. Add Basmati rice and gently toss. Adjust salt, meat masala and gently mix.

  8. Add 3 cups hot water, mix and sprinkle remaining fried onion, coriander leaves, and cranberries cover with a lid, and cook on low heat for 15-20 minutes.

  9. Switch the heat off, and open the lid just before serving. Transfer to a serving plate, and garnish with fried onions, dhania/mint leaves, and Cranberries.

  10. Your Cranberry Chicken Pulao is ready!
