Your favorite pasta (e.g., spaghetti, fettuccine, or penne): 2 cups
Garlic: 4-5 cloves (minced)
Red Chilli Flakes: 1 tsp
Salt and Black Pepper: According to taste
Parmesan Cheese: For garnish (grated)
Fresh Parsley or Basil: For garnish (chopped)
Boil water in a large pot and add a generous pinch of salt. Once the water is boiling and seasoned, add the pasta of your choice. Follow the recommended cooking time provided on the pasta package for best results.
Once the pasta is cooked, drain it and reserve about 1/2 cup of pasta cooking water. This starchy water will be used to create the sauce.
In a pan, heat the mustard oil over medium-low heat.
Add minced garlic and red chili flakes to the pan. Sauté for about 1-2 minutes until the garlic becomes fragrant and slightly golden. Be careful not to brown it too much.
Add the cooked and drained pasta to the pan. Toss it with the garlic and mustard oil, ensuring the pasta gets well coated with the flavors.
If the pasta appears too dry, add some of the reserved pasta cooking water, a few tablespoons at a time, until you reach your desired sauce consistency. The starchy water helps to create a creamy sauce that clings to the pasta.
Season the pasta with salt and black pepper to taste. Stir well to distribute the seasoning evenly.
Garnish the pasta with grated Parmesan cheese and chopped fresh herbs like parsley or basil.
