Masu Bhaat
Hearty, aromatic, and deeply comforting, Masu Bhaat is a traditional Uttarakhandi dish that brings together tender, spice-infused meat and fragrant rice. Known for its rustic flavours and warming spices, this is the kind of meal that feels especially comforting when enjoyed with family. Prepared with P Mark Kachi Ghani Mustard Oil, Masu Bhaat gets the distinctive depth and aroma that perfectly complements the robust flavours of the meat and spices. Here's how you can recreate this Uttarakhandi classic in your own kitchen.

Ingredients for Masu Bhaat
For the Masu:
Mutton – 500 g, preferably bone-in
P Mark Kachi Ghani Mustard Oil – 4 tbsp
Onion – 2 medium, finely chopped
Ginger-garlic paste – 1½ tbsp
Tomato – 2 medium, finely chopped
Cumin seeds – 1 tsp
Bay leaf – 1
Black cardamom – 1
Cinnamon – 1-inch piece
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 1½ tsp
Garam masala – ½ tsp
Salt – to taste
Water – as required
Fresh coriander – for garnish
For the Bhaat:
Rice – 2 cups
Water – as required
Salt – to taste
Method for Masu Bhaat
Wash the rice thoroughly and cook it until tender and fluffy. Keep aside.
Heat mustard oil in a heavy-bottomed pan until it reaches smoking point, then lower the heat. Add cumin seeds, bay leaf, black cardamom and cinnamon, and sauté until fragrant.
Add the onions and sauté until golden. Stir in the ginger-garlic paste and cook until the raw aroma disappears. Add the tomatoes, turmeric powder, red chilli powder, coriander powder and salt, and cook until the oil separates from the masala.
Add the mutton and coat it well with the masala. Sauté for 8–10 minutes, then add water as needed, cover and cook until the meat is tender (or pressure cook for faster results).
Add the garam masala and simmer for 3–5 minutes.
Garnish with fresh coriander and serve hot with the bhaat.
