This week, we’re bringing you a recipe that turns a humble pantry staple into something truly irresistible - Soya Chunks Fry. Crisp on the outside, juicy on the inside, and coated in bold, punchy spices, this dish is all about big flavour with minimal fuss. Perfect as a side, a snack, or even the star of your meal - this one’s a keeper.

Ingredients for Soya Chunk Fry
P Mark Kachi Ghani Mustard Oil – 3 tbsp
Soya chunks – 1½ cups
Onions – 2 large, finely chopped
Tomatoes – 2 medium, finely chopped
Ginger-garlic paste – 2 tbsp
Green chillies – 2, slit
Cumin seeds – 1 tsp
Bay leaf – 1
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 1½ tsp
Garam masala – 1 tsp
Salt – to taste
Fresh cream – 2 tbsp (optional)
Fresh coriander – for garnish
Method for Soya Chunk Fry
Boil the soya chunks in salted water for 5-7 minutes. Drain, rinse with cold water, and squeeze gently to remove excess moisture. Set aside.
Build the base. Heat the P Mark Kachi Ghani Mustard Oil in a heavy-bottomed pan until it reaches its smoking point, then lower the heat.
Add cumin seeds and bay leaf, letting them release their aroma. Slow-cook the aromatics
Add chopped onions and sauté until soft and lightly golden.
Stir in ginger-garlic paste and green chillies, cooking until the raw smell fades. Spice it right
Add turmeric, red chilli powder, coriander powder, and salt. Mix well, allowing the spices to bloom in the mustard oil.
Add chopped tomatoes and cook until they soften completely and the oil begins to separate at the edges.
Add the prepared soya chunks and stir well to coat them evenly in the masala. Add a splash of water, cover, and let it simmer so the chunks absorb the flavours.
Sprinkle garam masala and, if using, fresh cream. Simmer uncovered for a few minutes, then turn off the heat.
Serve soya chunks fry hot with rotis, parathas, or plain rice.
